Palm sugar is originally extracted from the pure sap of the arenga and date palm. In Thai and Javanese cuisine, palm sugar is a very common ingredient and is used daily. The harvested pure juice is slowly evaporated into palm sugar in a traditional way. In this way, naturally occurring substances such as minerals, antioxidants and vitamins are preserved. This superfood has been used for centuries by the inhabitants of these countries. Harvesting the valuable juice is a manual process. This pure sap can be harvested by cutting a thin slice from a branch. Mature trees produce 20-30 liters of pure sap every day in this way. This tapping does not harm the tree at all.
