Mattisson Celtic Sea Salt Flower of Salt (Fleur de Sel) is extracted in a special way. Fleur de sel is extracted from virtually salt-saturated water. The extraction takes place in two steps. The first time, only the top layer of crystallized salt from the salt basins is extracted. This manual work is time-consuming and only a few grams can be gained per square meter (depending on circumstances). Because it is salt that has only just crystallized, it has a fine crystal structure. Then, the second time, the coarse salt is extracted, which is the lower salt with larger crystals near the bottom. After extraction, the salt is dried. But the drying is not complete. Fleur de sel still retains approximately 5% humidity, which also contributes to its character. The favorable conditions for extracting fleur de sel are only present for one month per year (from mid-July to mid-August in the Northern Hemisphere). Has a mild taste and white color and coarse structure.
