Quercetin from food is hardly absorbed
Quercetin is a so-called bioflavonoid, a nutrient that we find in citrus fruits, onions, potatoes and buckwheat, among others. However, we are encountering a problem with the substance we previously referred to as vitamin P. During cooking, 70 to 90 percent of quercetin disappears from our diet.
The 10 to 30 percent that then reaches our digestive system experiences another bottleneck. Quercetin is a nutrient that binds with phytonutrients (antibodies), making the absorption of quercetin more difficult. Due to the small amount of quercetin that ultimately ends up in the cell, supplementation is often recommended.
Less binding with phytonutrients
